But it's like, theres a ton of animals in our world that we don't really interact with, and theres millions of species.

It's really more of a case of flanderization on a wordly scale: as the series progresses. The creators try to make it more kid friendly and generally a nice world.
Heck, the original game had pokedex ratings saying how Pidgeys would EAT Weedles and Caterpies for a living.
Now? Nada.

It's statistically impossible to catch all the pokemon sans hacks.
Theres 649 pokemon, if you take into account the 19 with alternate forms (Shaymin, Giratina, Wormaden, etc) to a total of
Then you have 727 pokemon.
Granted, you also have shiny pokemon, so that amounts to 1454 pokemon.
Consider that you have Spinda's alternate forms, of which there are 4 294 967 295 possible forms. Double that for shiny and you have 8 589 934 590. Or a total of 8 589 936 042 possible pokemon.
