The thing is, in Manga; drawing fights is fun, but nobody wants to read 10 pages of sword slashes (*cough*Bleach*cough*), so a good mangaka has to know how to mix in the action as well as keep a good story going.
Problem is, what might be a 20 page fight in the manga becomes a four episode showdown in the anime, because they can actively show the fight properly, they choose to make the anime focus on that, hence the reason its dragged out.

But seriously though, why else would you watch the anime anyways? =P
